Let me explain first! “Bloom” has nothing to do with blooming and flowers. It’s a Greek thing! The general reference is for babies when they take a bath or put them in the sea to teach them how to swim (yeah when you are Greek you first learn how to float and swim and then how to walk) The word bloom is associated with water but in the kitchen any reference to “bloom” it implies that you put all the ingredients together to make a meal, kind of like a “one pot meal”. Now I don’t know if that’s an official term in the Greek culinary school but it’s certainly something my mom always said and we knew what was happening in the kitchen.
This recipe is one of my favorites that we always made at home in the summer time without protein or with shrimp, for a light meal with a glass of chilled Mosxofilero or Malagouzia (Amazing Greek wines kind of like Pinot Grigio).
Given I’m doing #cleanketo75 I used shirataki noodles and dairy free cheese. I also used pork rinds instead of breadcrumbs. And I didn’t have the wine to go with it
Instead of shrimp I used my last piece of my leftover pork belly. I trimmed all the fat so I can meet my protein goal and also make it lighter but it’s up to you to leave it on. I also added @purefirefood for an extra kick.
Ingredients:
Serves 2
1 pack of @welllean_ig fettuccini
8 grape tomatoes cut in half
2 cups baby spinach or kale
1 small onion
8-10 leaves fresh basil
1 tsp crushed garlic
2T olive oil
1T @purefirefood
1.5 cups beef bone broth
1oz pork rinds toasted
1oz dairy free cheese of choice
@redmondrealsalt, black pepper
Red pepper flakes to taste
Garlic bread:
1/2 of my keto bread rolls (Email me to order)
1/2 tsp @lewisroadusa unsalted butter
1/4 tsp crushed garlic
1T shredded dairy free cheese
How to:
1. Add olive oil, onion and garlic in a cast iron pot, cook for awhile to sweat the onion.
2. Add everything else, except for the pork rinds and shredded cheese, and cook until the broth is reduced down to almost nothing.
3. Serve and top with a mixture of pork rinds and shredded cheese
4. Garlic bread - butter the roll, add garlic, top w/ cheese and a few sprinkles of pepper flakes. Toast for 2 minutes
