Low carb friend "rice" using cauliflower that really tastes like the real deal. It is keto and diabetic friendly. I would recommend reading the notes prior to making it. It's one of my favorite dishes for leftovers.
Ingredients:
4 cups roasted chicken (skin removed)
1 small cauliflower
2 scallions
4-5 shiitake mushrooms
¼ c frozen peas
2 garlic gloves crushed
1 tsp of shredded or sliced ginger
1 egg
3T coconut aminos
2T sesame oil
1T ghee
Sesame seeds
How to:
- Prep your vegetables – slice the mushrooms and scallions and defrost the peas
- Cut up the cauliflower in small pieces and put in a blender to rice it. Put in a container, cover with plastic wrap and microwave for 3-4 minutes depending on your microwave. You want to soften it but not fully cook it
- Use a clean towel or cheese cloth and put the cauliflower rice in, squeeze all the excess water
- Use a cast iron skillet or a wok, put the ghee and let it melt
- Pull apart the chicken and put in the ghee, toss around a couple of minutes
- Add cauliflower rice and the rest of the vegetables, add the coconut aminos and the sesame oil and let them cook for 10-15 minutes in low heat stirring often
- Add the garlic and ginger
- Taste and adjust accordingly
- Wisk the egg and add to the fried rice, keep stirring
- Garnish with sesame seeds and enjoy!
Notes:
1. You can adjust quantities for vegetables to your liking but try to keep the peas as low as possible due to the high carbs. If you decide to use shredded carrots, I would recommend reducing the amount of peas, unless your daily allowance covers it.
2. Be careful for carbs and calories on coconut aminos and sesame oil
3. You can replace chicken with shrimp, pork, beef or all of the above
4. If you add ham or bacon, add the aminos one tablespoon as a time to monitor the saltiness
5. Another source of hidden carbs is sesame seeds, especially black sesame seeds, so be mindful when you use them.
6. You may need to add a couple of tablespoons of water or broth to cook the vegetables, just monitor it and adjust accordingly
