This is something very quick to do with leftover keto pound cake (or any other keto cake). The recipe is for one serving because I didn’t want to have leftovers but you can certainly adjust and make more servings than one.
It doesn’t have cream cheese, mascarpone or eggs. It is a quick fix!
Ingredients:
Base:

2 very thin slices of keto pound cake
3T water
1.5 tsp instant coffee (I used @nescafe_tasterschoice )
2T white rum (I used @Bacardi )
1 tsp confectioners @swervesweetie
Chocolate layer:

3T dark sugar free chocolate I used @cocopolosuperfood )
1/2 tsp butter
Cream:
———
3T cold heavy cream
1.5 tsp @swervesweetie
3 drops tiramisu flavor @oooflavors
Unsweetened cocoa powder (I used @guittardchocolate )
How to:
- Start with the cream. Put the heavy cream, sweetener and tiramisu flavoring in a cup and use a frother to whip into whipped cream. Put in the fridge.
- Cut the edges of the pound cake so you have two rectangular pieces. Cut them in half. You will have 4 small cakes approx 2x2
- Mix the water, coffee, run and sweetener, stir until everything incorporates.
- Brush the cake and set aside
- Melt the chocolate w/ the butter
- Once the cakes fully absorb the coffee, top each cake with a tsp of chocolate, smooth it out and put in the fridge until it sets.
- Assemble; start with the first cake, top w heavy cream mixture and continue building your mini tower. I just added a dollop or whipped cream on the top, dust with cocoa powder and a fresh strawberry. Eat right away or put in the freezer until you enjoy it.
