This is a very easy recipe and you can adjust in so many ways. It is my favorite things to make in the weekends and enjoy with a nice cup of coffee. It is very keto, almost zero carbs, gluten free and certainly diabetic friendly. Here are a few variations and one of them is also dairy free.
This is a single serving recipe using a Le Creuset Mini Cocotte.
1st Variation - Eggs w/ Ham & Cheese

Grease the cocotte with butter or ghee, don't use too much. Cut one slice of ham and cover the bottom and sides. Crack two or three eggs, add salt/pepper, cover with two slices or mozzarella and bake at 325F for 20 to 30 minutes depending how you like your eggs. The longer you bake the more well done your eggs will be. You can also top the cheese with "everything but the bagel" seasoning, which is one of my favorites. Enjoy!
2nd Variation - Eggs w/ Bacon

Grease the cocotte with butter or ghee, don't use too much. Cut up cooked bacon is small pieces and cover the base. Crack two or three eggs, add seasoning of choice and bake at 325F for 20 or 30 minutes. One seasoning I tried on this one was steakhouse seasoning by DAKS spices. Enjoy!
Note: Be careful with the seasoning you use as it may come out too salty given the bacon.
3rd Variation - Eggs w/ Ham, Baby Kale & Cheese

Grease the cocotte with butter or ghee, don't use too much. Cover the base with ham, top with baby kale or baby spinach, cut up a couple of grape tomatoes, crack your eggs, add seasoning. Top with two slices of mozzarella and bake at 325F for 20 to 30 minutes. Enjoy!
4th Variation - Dairy Free - Eggs w/ Ham & Dairy Free Cheese

Grease the cocotte with butter or ghee, don't use too much. Cover the bottom and sides with two slices of ham or prosciutto, crack your eggs, add seasoning and top with any seasoning of choice. Add dairy free cheese, I used mozzarella by Violife. It does not create a crust but it melts nicely and blends very well with the eggs. Bake at 325F for 20 to 30 minutes. Enjoy!
5th Variation - Eggs w/ Feta & Bacon

Grease the cocotte with butter or ghee, don't use too much. Cover the bottom with cut up cooked bacon, crack your eggs, season and top with crumbled feta cheese. This will come out salty because of the bacon and feta. I did not use any salt. Bake at 325F for 20 to 30 minutes. Enjoy!
