This is another great recipe that not only it's Keto but it's also gluten free and of course, sugar free and diabetic friendly. Ingredients:
Makes 6 Servings
4 eggs
1/2 cup of heavy cream
1/2 cup of water
2 teaspoons sweetener of choice (I used @
highkeysnacks
sweetener mix) - optional
1 teaspoon cinnamon
1 tablespoon lemon extract
10 blackberries
15 raspberries
1/2 cup pecans
How to:
- Preheat oven at 350F
- Cut up the bread is small cubes and arrange them in a cast iron skillet or an oven proof pan of choice
- Whisk the eggs in a bowl, add heavy cream and water, cinnamon and sweetener. Ensure everything is incorporated
- Pour over the bread and let the egg mixture be almost fully absorbed by the bread
- Crumble lolli's clusters over the bread, add the pecans and the fruits
- Mix well and bake at 350F for about 20 minutes. Baking time may vary depending on your oven
- Serve warm. You can drizzle sugar free maple syrup, do a glaze or serve with keto/sugar free ice cream
Notes:
2. You can use any bread. In this case, Julian's bread has some sweetness to it and really compliments the dessert
3. Instead of 1/2c heavy cream and 1/2c water, you can use 1 cup of nut milk
4. Sweetener in the mix is optional. I tend to like this sweet but with only 2 tsp, it's not overpowering
5. Almonds will also go very well with this if you are not a fun of pecans
