A classic Greek dish that you can find in most, if not all, Greek restaurants in NY. A dish that I loved growing up and missed dearly while in Keto. But I made it my mission to ketofy Greek food, starting from my family recipes, and this is how Greecefully Keto was born!
Ingredients:
2 bunches of scallions
1 bunch of dill
1 large white onion
3-4 packages of baby spinach
1/2c good olive oil
Pink salt (or salt of choice) and pepper
2 packages of @welllean rice
Lemon
How to:
· Wash the scallions thoroughly as there is often soil residue inside the green part. Cut up both green and white parts in small pieces.
· Wash and cut up the dill
· Wash and dice the onion.
· Put all of the above with the oil in a pan and sauté.
· Add spinach one pack at the time. Spinach tends to become watery once it softens and also disappears! Pay attention to the water in the pan. You may need to add 1 cup of water until the spinach cools down.
· Open the “rice” packages and rinse thoroughly under cold water. Let it drain. Add in the spinach and let it cook with the food so it absorbs all the flavors
· Add salt and pepper to taste.

Add fresh lemon to taste and enjoy.
Notes:
You can eat as is or serve with any protein you like. I personally love it as is, with extra lemon and feta cheese on the side.
It is also delicious if you sprinkle parmesan cheese on top.
This recipe has very low carbs and it's diabetic friendly.
