A very easy and quick recipe putting food on the table in 45 minutes tops. Low in carbohydrates mostly from peppers and onions which is amazing to think that even vegetables have carbs, but it's the ugly truth :)
Ingredients:

6 chicken sausage links (I used Chicken w/ Asiago & Garlic from @Costco)
1 medium green pepper
1 medium yellow pepper
1 medium orange pepper
1 medium red pepper
2 medium onions
1c bone broth (I used @Kettle&Fire)
4T ghee (I used @vitalfarm)
Salt/pepper to taste
Oregano
1 medium cauliflower head cut up in pieces
2T organic butter
Salt/pepper to taste
2T grated Parmesan cheese
@dakspices ranch seasoning
How to:
- Cut the sausage is slices and brown it in a pan with 2T ghee. Remove and keep warm.
- Cut up the peppers and onions in large pieces, put in the same pan you sued for the sausage so all the flavors incorporate. Add the remaining ghee and bone broth and let it simmer for 15-20 min until peppers soften.
- Add back the sausage, stir and put in a preheated oven at 350F until the vegetables are cooked through and take a nice color, (30-45 minutes depending on your oven).
Cauliflower mash
- rinse the cauliflower and cut it up in small pieces in a plastic container. Cover w/ plastic wrap very tightly. Put in the microwave for 5-6 minutes.
- Remove and squeeze in a clean towel or cheese clothe to drain all the water out.
- Put in a food processor, add butter, Parmesan, seasoning and pulse and blend until you get a creamy consistency.
- Taste to see if more salt or seasoning is needed and adjust accordingly.
- Serve and top w/ chicken sausage w/ peppers and onions and enjoy!
