I have been craving pancakes since New Year’s Day! Yup, that was the last time I made a stack. Today was the day, blame it on Daylight Savings or to just yummy cravings!
Now, as you may have noticed, I love @highkeysnacks I use their sweetener mix as is and when I bake and I’m obsessed with their hot cereal, especially their maple brown sugar. Today I tried their pancake mix and now I have one more obsession 🤭I did make some variations (shocker!) I used butter instead of coconut oil as I always find the coconut flavor is coming out more than I enjoy.
I loved the mix; sweet enough without being overpowering, fluffy and not grainy, great consistency that holds so when you flip the pancakes they don’t fall apart. And it is also a gluten free mix. The best mix I’ve tried so far. Give it a try, you won’t regret it!

Keto Blueberry Orange Pancakes

2.5 T @kerrygoldusa salted (put in microwave for 30sec to melt)
4 T almond milk unsweetened (I use @califiafarms )
1 egg
1/2 c @highkeysnacks pancake mix
1/2 tsp orange extract (I used @nielsenmassey )
1/4 c fresh blueberries (mine were huge maybe so adjust to your liking or the size of the berries)
Sugar free maple syrup by @choczero
A handful of @fearlessketo maple glazed and banana walnuts (I’m down to less than a cup so I mixed in a glass container the leftovers from each bag; maple glazed and banana walnuts)
- Melt the butter, add the pancake mix, add the egg and everything else. (Hold the berries and walnuts for the end)
- Mix well with a whisk. I added a few of the berries inside and left the rest for garnish. You can do what your heart desires! Drizzle w sugar free syrup and enjoy!
