Ingredients: Cake-
1 package keto queen creations yellow cake mix
3/4C crook and marker blueberry lemonade beverage
4 large eggs separated
¼ C butter melted
10 drops @oooflavor vanilla cupcake flavor
5 drops @oooflavor blueberry flavor
Jam Filling:
@Greecefullyketo blueberry lemon jam
Frosting:
2 sticks butter (I used salted)
1.5 C powdered sweetener
1 C white chocolate chips melted and cooled
2-3 tbsp heavy whipping cream
8 drops vanilla cupcake extract
Lolli’s lemon drop cookie clusters crumbled
Lemon zest for decoration
Directions:
1. Preheat oven to 350* and grease two 6” round cake pans.
2. Add cake mix, butter, egg YOLKS, and vanilla to a large mixing bowl. Mix well and then mix in blueberry lemonade beverage. In separate bowl whip egg whites to stiff peaks. Fold egg whites into to batter mixture 1/3 at a time. Press batter into 2 6’ pans and bake 30-35 minutes or until done. Let the cake cool completely and then poke holes around the cake ½ way deep for the jam.
3. Pour the jam onto the cake pressing into holes with a spoon, and refrigerate 1 hour. Slice cakes in half horizontally so that you will have 4 layers.
4. To make the frosting whip butter and sweetener until light and fluffy. Add in melted white chocolate and continue to whip a few minutes longer scraping down the sides as needed. Add heavy cream and whip 1-2 minutes more.
5. Layer: cake- frosting-jam, cake- frosting- jam until ending with a lightly frosted top layer of cake. Frost the entire outside of cake lightly as to still see the cake layers.
6. Crumble up the Lolli’s cookie clusters and place around the top perimeter of the cake. I filled the center of the well of clusters with more jam and sprinkled on some fresh lemon zest.
